Pizza Bases

Our Pizza Bases

The Art of Patience. The Passion of Rome.

At Roma Capoccia QLD, we believe that great pizza starts long before it reaches the oven. It begins with quality ingredients, carefully selected premium flours and, most importantly, time.

Inspired by the traditions of Italian pizza-making and Alessandro’s training in Rome, our pizza bases are crafted using a premium blend of flours and a dough maturation process of at least 72 hours.

Because when it comes to great pizza, we believe that patience makes all the difference.

72 Hours of Maturation. A Difference You Can Taste.

Our dough is given at least 72 hours to mature, allowing time for natural fermentation to develop its flavour, aroma and texture.

By using a carefully controlled process and a low amount of yeast, we allow the dough to develop gradually rather than relying on rapid fermentation. During this time, naturally occurring enzymes in the flour become active, helping to break down some of the complex carbohydrates, proteins and other components of the dough.

Enzymes such as amylases help break down starch into simpler sugars, which yeast can use during fermentation. This contributes to the development of flavour, aroma and the characteristics of a well-matured dough.

Extended maturation also allows changes to occur in the dough’s protein structure, helping develop its texture and bite.

The result is a pizza base crafted with time, care and attention to detail, designed to deliver a delicious Italian-inspired pizza experience at home.

Premium Flours. Carefully Crafted.

We believe the foundation of an exceptional pizza lies in the quality of its ingredients. Our premium flour blend is selected to support the dough’s long maturation process and help develop the texture and character we want in our pizza bases.

Every stage matters, from selecting the flour to allowing the dough the time it needs to mature.

Inspired by Rome. Crafted in Blue Steel.

Our pizza bases measure approximately 30 × 30 cm, offering a generous square format inspired by the tradition of pizza in teglia — Italian tray-baked pizza.

To honour this tradition, we use specially made blue-steel baking tins from Rome, Italy. Blue steel is valued in professional baking for its heat conduction and its ability to help develop a beautifully baked base when used correctly.

These tins are more than just baking equipment. They reflect our connection to Rome and our respect for the techniques and tools that have shaped Italian pizza-making traditions.

From the carefully matured dough to the baking equipment, every detail is chosen with a purpose: to bring a little taste of Rome to Queensland.

Our Approach to a More Enjoyable Pizza

A long, carefully managed maturation process and the use of less yeast can influence the flavour, structure and characteristics of pizza dough.

Fermentation can also reduce certain fermentable carbohydrates, depending on the flour, recipe and fermentation conditions. For some people, this may make pizza easier to tolerate. However, digestibility varies from person to person, and we do not claim that our pizza bases are suitable for everyone.

For us, it is about respecting the ingredients, understanding the science behind the dough and never rushing a process that deserves time.
